I found this recipe a few months ago and Mike and I have been 100% obsessed with it ever since. We've made it approximately 1 billion times (give or take) and I suddenly realized that I hadn't shared the gloriousness with you yet! So without further delay... here you go :)
Baked Maple Salmon
- 1 pound of salmon (we use two 6-oz portions)
- 2 tbsp maple syrup
- 1 tbsp soy sauce
- 1 tsp minced garlic (or a couple shakes of garlic powder)
- 1/8 tsp black pepper
Mix marinade ingredients in a bowl.
Place salmon in a baking dish and pour marinade over top.
Marinate in the fridge for min 30 minutes, max all day*! Flip once halfway through if you can.
Preheat oven to 400* and bake salmon for 20 minutes, or until flakes with a fork.
* Pretty sure we've never remembered to marinate the salmon for longer than 5 minutes, and it still turns out deliciously!
This recipe is "fancy" in our book but luckily still doesn't break the bank. Wegmans (the main grocery store up here... it's amazing) sells a package of 6, 6 oz frozen salmon filets for $16. This is SO MUCH cheaper than buying fresh fish and it's still really amazingly delicious!
Also, for anyone who isn't a big fish fan, this might be the perfect recipe for you. The marinade actually makes the fish taste less... fishy? than any other recipe I've had. It's delicious, try it ASAP!!
